crab cakes

blueberries & crushed graham cracker

What does one eat on a beach vacation? Crab cakes served on a bed of sand, of course.

When making pancakes for three children under the age of five, who ask every 30 seconds if their pancakes are ready, speed and efficiency is key. So graham crackers were crushed in advance, crabs were quickly drawn on the griddle with a squirt bottle and blueberries added soon after. Easy peasy.

Tips: Crushing graham cracker is a cute way to add a sandy textural element, but I recommend serving to people only over the age of 10. It ended up everywhere.

Cute, and so perfect! Love his beady blueberry eyes. And how appropriate for early July’s astrological sign.
